Anaerobic Process Coffee

Anaerobic coffees are fermented in sealed tanks with little or no oxygen before drying, sometimes as whole cherries (anaerobic natural) and sometimes after pulping (anaerobic washed). Producers control time and temperature closely. The results are often intensely fruity, boozy, or spiced, and can taste very different from the same lot processed traditionally.
