Washed Process Coffee

Washed (or wet-processed) coffee has the cherry fruit removed before drying: the beans are pulped, fermented briefly to loosen the remaining fruit, then washed clean and dried. Because little fruit stays on the bean, washed coffees usually taste clean and bright and show the character of the variety and region clearly.
