Wet-hulled Process Coffee

Wet hulling (giling basah) is common in Indonesia, especially Sumatra. The parchment is removed while the bean is still moist, and the bean then finishes drying on its own. This quick, humid-climate method gives the heavy body, low acidity, and earthy, herbal notes typical of Sumatran coffee.
